Thanksgiving Dinner Recipes | Candied Yam Thanksgiving Casserole

Candied Yam Thanksgiving Casserole

One of our childhood favorites – Candied Yams. Our recipe from our family to yours.
Ingredients
  • 2 (16 oz.) cans yams, drained well
  • 2 eggs
  • 1/2 C dark brown sugar, firmly packed and divided
  • 1/3 C butter, melted and divided
  • 1 tsp. salt
  • 1/2 C pecan halves
Instructions
  1. Place the drained yams into a large mixing bowl and mash well with a potato masher or fork.
  2. Break the eggs into the mashed yams.
  3. Add 1/4 C of the brown sugar, 2 tbsp. of the melted butter and the salt to the mixture.
  4. Use an electric mixer on medium speed and beat the ingredients together well.
  5. Set the oven temperature on 350 degrees and allow the oven to preheat.
  6. Spray a 1 qt. casserole dish with a non stick cooking spray.
  7. Place the yam mixture into the prepared casserole dish.
  8. Lay the pecan halves over the top of the yam mixture to completely cover the top.
  9. Sprinkle the remaining brown sugar over the top of the pecan halves.
  10. Drizzle the remaining butter over the top.
  11. Bake 25 minutes
Notes

4 fresh yams can be substituted for the canned yams. Peel, quarter and boil them in water until fork tender before mashing.  This dessert also tastes good with mini marshmallows place over the top of the pecans instead of the sugar and butter.  Watch baking time so the marshmallows do not burn.  If they become to brown cover with foil and continue baking.

Cranapple Thanksgiving Dessert Casserole Recipe

Sick of the traditional Thanksgiving desserts? Give our cranapple dessert casserole a try.
Ingredients
  • 3 C fresh apples, peeled and diced
  • 2 C fresh cranberries
  • 1 C sugar
  • 1/2 C brown sugar
  • 1/4 tsp. Salt
  • 1/3 C pecans, chopped
  • 1/2 C butter, melted
Instructions
  1. Place the apples and cranberries into a mixing bowl
  2. Sprinkle the sugar over the fruit and toss to cover well.
  3. Set the oven temperature to 325 degrees and allow preheating.
  4. Spray a rectangular casserole dish with a non stick cooking spray well.
  5. Spread the fruit mixture into the prepared dish.
  6. In a separate bowl place the brown sugar and salt.
  7. Add the pecans to the brown sugar mixture and toss to combine all the ingredients together.
  8. Pour in the melted butter and with a rubber spatula stir from the bottom up until well coated with the butter.
  9. Spread the pecan mixture over the top of the casserole.
  10. Bake 55 minutes or until a light golden brown on top.
Notes

If you don’t like or can’t eat pecans use rolled oats instead.  Spice it up a little by adding a 1/4 tsp. of cinnamon to the brown sugar mixture before adding the pecans or oats.

1 C saltine crackers, crushed
1 pt. fresh oyster, reserve liquid
1/4 C scallions, diced
1/4 C fresh parsley, chopped
1 tbsp. lemon juice
1 tsp. salt
1/2 tsp. pepper
1 tsp. Worcestershire sauce
8 tbsp. (1 stick) butter
1 C light cream
1/2 C milk
1 dash Tabasco sauce
1/2 tsp. paprika

How to Make It:

Set the oven temperature to 400 degrees and allow the oven to preheat.
Generously spray a shallow casserole dish with a non stick cooking spray.
Layer the bottom of the casserole with 1/3 of the crushed crackers.
Layer half of the oysters over the top of the crackers.
Layer half the scallions over the oysters.
Whisk the parsley, lemon juice, salt, pepper and Worcestershire sauce together.
Pour half of the lemon juice mixture over the top of the casserole.
Dot the top of the casserole with half of the butter.
Mix the cream and milk together and pour half of that over the casserole.
Repeat the layers topping the casserole with the last 1/3of the cracker crumbs.
Add the dash of Tabasco sauce before topping with the cracker crumbs.
Sprinkle the paprika over the top of the cracker crumbs.
Bake 30 minutes or until the casserole is set and jiggles when shaken.

This Thanksgiving Dinner Recipe Serves 6

This is always a hit on Thanksgiving.  It makes a great substitute for that always welcomed oyster dressing.

Thanksgiving Dinner Recipes: Sweet Rhubarb Thanksgiving Casserole Recipe

What You Need:

3 C rhubarb, sliced
1 tbsp. lemon juice
4 tbsp. sugar, divided
2 tsp. butter
2 C baking mix
2 C whipping cream

How to Make It:

Place the rhubarb in a large mixing bowl.
Add the lemon juice and toss to cover the fruit well.
Sprinkle 3 tbsp. sugar on the fruit and toss again making sure all the fruit is covered.
Add the butter and stir carefully to incorporate.
Spray a casserole dish on the sides and bottom with a non stick cooking spray.
Set the oven temperature to 350 degrees and allow the oven to heat.
Mix the baking mix as directed on the package for biscuits.
Place the fruit into the prepared casserole dish.
Press the dough over the top of the fruit being sure to seal the edges.
Vent the dough with a fork in 6 places.
Bake 35 minutes or until the crust is a golden brown.
Mix the whipping cream and the remaining 1 tbsp. of sugar together until the sugar is dissolved.
Pour the cream mixture over the casserole before serving.

If you are not partial to rhubarb other fruits such as peaches, apples or pears also taste great in this recipe.  You can also sprinkle a little cinnamon over the cream for an added delight.

Thanksgiving Dinner Recipes: Fruit Medley Thanksgiving Casserole Recipe

What You Need:

1 (15 oz.) can pear slices, drained
1 (15.5 oz.) can pineapple chunks, drained
1 (15 oz.) can peach slices, drained
1 (15 oz.) can apricots halves, drained and sliced
1 (15 oz.) can dark sweet cherries
1 (1 lb.)  box light brown sugar
2 sticks butter
1 tsp. cinnamon,
1/2  tsp. nutmeg
1 (24 oz.) jar regular applesauce

How to Make It:

Set the oven temperature to 350 degrees and allow the oven to heat.
Spray a large casserole dish with a non stick cooking spray.
Place the pear slices in the bottom of the prepared casserole.
Sprinkle 1/5 of the box of brown sugar over the top of the pears.
Dot 1/2 stick of the butter over the top of the casserole.
Mix the cinnamon and nutmeg together in a small mixing bowl.
Sprinkle 1/5 of the spice mixture over the top of the butter.
Spread 1/5 of the applesauce over that.
Continue to layer in this manner beginning with the fruit until all the ingredients have been used.
Bake 25 minutes or until heated completely through.

This Thanksgiving Casserole Recipe Serves 8

To make this dish a little more festive over the holidays add 1/2 C red hot candies to the applesauce before spreading into the casserole.
