You have the traditional all day in the oven turkey recipe to more modern recipes like deep fried and smoked turkey. Hearty Leftover Turkey Pot Pie Recipe | Thanksgiving Turkey Recipes

Hearty Leftover Turkey Pot Pie Recipe

Make a terrific leftover Turkey Pot Pie with our unique recipe.
Ingredients
  • 1 pound cooked leftover turkey breast, cubed (about 2 cups)
  • 1 cup leftover turkey gravy (or prepare a packaged mix of turkey gravy)
  • 14.5 oz. can chicken broth
  • 2 tablespoons cornstarch (In the video I mistakenly said 2 teaspoons. It is 2 tablespoons.)
  • 15 oz. can mixed vegetables, drained
  • 1 unbaked 9-inch deep-dish pie crust, thawed
  • 1 round prepared pie crust for top of pot pie
  • Freshly ground pepper, to taste
Instructions
  1. In a medium pot, combine 14.5 oz. chicken broth with 2 tablespoons cornstarch.
  2. Turn on the heat and cook, stirring constantly until translucent.
  3. Add in 1 pound leftover cubed turkey and 1 cup leftover turkey gravy.
  4. Stir until combined, and then add 15 oz. canned mixed vegetables.
  5. Cook this mixture until the turkey, gravy, and vegetables are bubbly and heated through.
  6. If the mixture is thicker than you like, add more chicken broth.
  7. If it seems too thin, mix a small amount of cornstarch with chicken broth and quickly stir it into the cooking turkey pot pie mixture.
  8. When cooking is complete, spoon the turkey pot pie mixture into an uncooked deep dish pie crust.
  9. Fill until near the top, but not so full that it might boil over in the oven.
  10. Now place a round of pie crust over the top of the filled crust.
  11. Trim the edges of the pie crust circle to match the size of the deep-dish pie crust.
  12. Then flute the edges, bringing the deep-dish pie crust and the top circle together.
  13. Cut a few slits in the top pie crust circle to let steam escape.
  14. Put the completed turkey pot pie in an oven that has been preheated to 350 degrees for about 20 minutes, or until the turkey pot pie is bubbly, and the crust is nicely browned and crisp.
  15. Remove from the oven, and place on a protected counter top. let stand for 5 minutes before serving.
  16. Serve with freshly ground pepper, to taste.

Thanksgiving Leftover Turkey Recipes: Leftover Turkey Quiche Recipe

This is a quick easy quiche that you can make from Thanksgiving turkey leftovers.  It’s great for those office parties and after Thanksgiving get togethers.

What You Need:

5 large eggs
2 1/2 -3 cups leftover stuffing or half of a 6 oz package bread stuffing mix, prepared according to package directions
1 cup shredded Swiss cheese
1 cup diced cooked turkey
1/3 cup thinly sliced green onions
1/2 cup sliced mushrooms
1 cup half and half
Salt and pepper to taste

How To Make It:

Beat one egg and add stuffing to it.  
Press this into the bottom of a deep pie dish or a quiche pan if you have one, it will serve as a mock-crust for your quiche.
Bake on the bottom rack of the oven for 15 minutes at 425 degrees F.
Sprinkle cheese evenly over the stuffing-crust.
Layer in the turkey, onion, mushrooms in any order you wish.
Beat remaining 4 eggs in a small bowl.  Stir in the half and half. 
Season with salt and pepper to your tastes.
Pour egg mixture evenly over the layers in the pan.
Bake on the bottom rack of the oven for 30 minutes at 350 degrees F. 
Let it stand and cool for about 15 minutes to firm up before cutting and serving.

1 medium onion, chopped
1 cup carrots, sliced
1 cup celery, diced
1 tablespoon vegetable oil
1 package (9 oz.) frozen chopped spinach
3 cups cooked turkey
1/2 cups country or baked ham
1 can (10 3/4 oz.) canned cream of chicken soup
2 1/2 cup milk, divided
1/4 teaspoon black pepper
1 1/2 cup self-rising flour
1/4 cup Parmesan cheese
1/2 cup butter or margarine

How to Make It:

Cook onion, sliced carrots and celery with a little bit of vegetable oil in the skillet under just tender.

Stir in the spinach and pour it all into a shallow baking dish (at least 3 quarts or bigger).

Spread the chopped turkey and ham cubes evenly over top of everything in the dish.

In a medium mixing bowl blend together undiluted soup, 1 cup of milk and ground pepper. Pour this evenly over top of everything in the dish.

Mix together the flour, grated cheese, butter (or margarine) and remaining milk until nice and smooth.  Pour this over top of everything in the dish.

Bake 45 minutes to one hour at 400 degrees F. The top will be golden brown when done.

4 tbsp. butter, room temperature
1 tsp. garlic, minced
1/2 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. cloves, minced
1/4 tsp. curry powder
1 (5 lb.) turkey breast
1/4 C water
1 C orange juice

How to Make It:

In a mixing bowl blend together the butter, garlic, cinnamon, salt, cloves and curry powder until it becomes a spreadable consistency.
Rub the turkey with the butter mixture being sure to completely cover the turkey breast.
Fit an adjustable V neck rack into a shallow roasting pan.
Place the turkey breast on the V rack.
Bring the oven temperature to 350 degrees F.
Cook the turkey breast 1 hour being sure to turn the turkey 1/4 turn every 15 minutes and baste with the pan drippings to ensure the turkey is browned on all sides equally.
The 1/4 C of water may be added to the pan drippings if needed.
When you have turned the breast the last quarter of a turn pour the orange juice over the top of the turkey.
Continue baking an additional 30 minutes or until the internal temperature has reached 170 degrees.
Allow the turkey breast to stand for 20 minutes before cutting and serving.

For many cooks roasting is the best way to cook a turkey.  The oven temperature stays constant while basting and checking the internal temperature is much easier to do.  If you live on the adventurous side then grilling, deep frying and even rotisserie might be fun to try.
