Turkey Soup Recipe

Here’s a great recipe for the last of the leftover turkey. This recipe also uses the turkey carcass, adding extra flavor that you can’t find in a can.
Ingredients
  • 1 onion, chopped
  • 2 carrots, 1 chopped and 1 finely diced
  • 1 celery stalk, chopped
  • 1 tbsp of extra virgin olive oil
  • 1/2 cup of dry white wine
  • 1 turkey carcass
  • 4 cups of chicken stock
  • 4 cups of water
  • 1 bay leaf
  • couple of peppercorns
  • 2 sprigs of parsley
  • 1/2 tbsp of thyme
  • salt and pepper, to taste
Instructions
  1. Pull apart any leftover turkey meat with your hands, really working the bones to find the remaining secret sweet meat.
  2. Cook the onion, carrot and celery in extra virgin olive oil over moderately high heat, stirring for 7-10 minutes or until vegetables are golden.
  3. Add the white wine and bring to a simmer.
  4. Add the turkey carcass, chicken stock, water, bay leaf and peppercorns.
  5. Make a bouquet garni by tying fresh parsley and thyme in a little bundle so that you can remove it easily later on.
  6. Bring everything to a boil.
  7. Then lower to a simmer and cook for about and hour.
  8. Remove large pieces of the carcass and strain the soup back into a skillet.
  9. Heat over medium heat.
  10. Add the turkey and diced carrots and season with salt and pepper.
  11. Simmer the soup and skim any froth or fat as it rises to the surface.

1 (1 lb.) container of cottage cheese
1/2 lb. processed cheese, cubed
6 eggs, lightly beaten
1 stick butter, room temperature
2 tbsp. flour
1/4 tsp. Dry mustard
1 (10 oz.) spinach, chopped and thawed

How to Make It:

Place the cottage cheese into a large mixing bowl.
Add the processed cheese and mix to combine.
Add in the eggs and stir to incorporate.
Blend the butter into the mixture until well combined.
Add the flour and dry mustard and blend until all the ingredients are incorporated together well.
Fold in the spinach.
Place the oven temperature at 325 and allow the oven to heat.
Lightly spray a casserole dish with a non stick cooking spray.
Place the spinach mixture into the prepared casserole dish.
Bake for 65 minutes.

This Thanksgiving Dinner Recipe Serves 10

If you like salt and pepper to season with it may be added.  1/2 tsp. salt and 1/4 tsp. pepper should be added at the same time the flour and dry mustard are stirred in.

4 stalks of celery, sliced
1 C water chestnuts
1/4 C pimento, chopped
1 (10.75 oz.) can cream of chicken soup
1/2 tsp. salt
1/4 tsp. pepper
1/2 C almonds, sliced and toasted

How to Make It:

Place the celery into a large saucepan and cover with water.
Place the pan over medium heat and bring the water to a steady boil.
Continue cook 8 minutes or until the celery is tender.
Drain the celery.
Add the chestnuts to the celery and stir to combine.
Stir in the pimento and chicken soup until all the ingredients are completely blended.
Sprinkle in the salt and pepper in to the mixture and stir to incorporate.
Heat the oven to 350 degrees.
Spray a casserole dish with a non stick cooking spray on the bottom and sides.
Spread the celery mixture into the casserole dish.
Cover the top with the toasted almond slices.
Bake 30 minutes or until the casserole is completely heated through.

To toast the almonds place them in a saucepan over medium high heat.  Shake the pan and allow the almonds to toast for about 5 minutes or until they are a golden brown.  Add 2 tbsp. butter to the pan before the nuts to give them a light buttery flavor.

Thanksgiving Dinner Recipes: Carrot and Kohlrabi Thanksgiving Casserole Recipe

What You Need:

4 carrots, peeled and sliced
3 kohlrabies, peeled and sliced
1 onion, chopped
3 tbsp. butter, divided
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 C milk
1/4 C fresh parsley, minced
1 tbsp. lemon juice
3/4 C soft bread crumbs

How to Make It:

Put the carrots and kohlrabies into a large saucepan.
Cover the vegetables with water to just over the top of the vegetables.
Place the saucepan on high heat and bring the water to a steady boil.
Reduce the heat to medium, cover and cook 18 minutes or until the vegetables are fork tender.
Drain the vegetables into a large colander and set aside.
Place 2 tbsp. of the butter into a skillet over medium heat.
Add the onions and cook 5 minutes or until just beginning to tender.
Add the flour, salt and pepper and stir until completely blended together.
Pour in the milk slowly while whisking the ingredients together.
Allow the mixture to come to a slow boil while stirring constantly.
Continue stirring and cook for 3 minutes or until the sauce thickens to your liking.
When the sauce has thickened stir in the cooked vegetables.
Add the parsley and lemon juice and blend until all the ingredients are combined.
Bring the oven temperature to 350 degrees.
Spray a casserole dish generously with a non stick cooking spray.
Place the vegetable mixture into the prepared casserole.
Place the remaining 1 tbsp. of butter and bread crumbs in a skillet on medium heat.
Cook and stir for 2 minutes or until the bread crumbs are lightly browned.
Cover the top of the casserole with the bread crumbs.
Bake, uncovered, for 22 minutes or until the casserole is heated through.

Kohlrabi is a German turnip used in many German dishes.  If you can’t find kohlrabi in your local grocery store, regular turnips work just as well.

3 onions, peeled and sliced
3 tbsp. butter
1/2 tsp. Salt
1/4 tsp. Pepper
2 C oyster crackers, crushed
3/4 C sweet milk
2 eggs
1/2 C buttered bread crumbs

How to Make It:

Fill a saucepan 2/3 full of water and place over high heat.
Add the onions and bring to a rapid steady boil.
Reduce the heat to medium and continue to cook the onions 8 minutes or until tender.
Drain the onions well.
Spray a baking dish with a non stick cooking spray on the bottom only.
Layer the onions into the bottom of the baking dish.
Dot the butter on top of the onions.
Sprinkle with entire casserole with the salt and pepper.
Sprinkle the crushed oyster crackers over the top.
Place the milk in a saucepan and heat over low heat until just lukewarm.
Remove the milk from heat and whisk in the eggs.
Pour the mixture over the top of the casserole.
Spread the bread crumbs over the top being sure to cover to the edge of the dish.
Bake in a preheated 325 degree oven for 25 minutes.
The milk and eggs should be set and the top of the casserole slightly browned when done.

This Thanksgiving Dinner Recipe Serves 6

Use sweet Vidalia onions in this recipe for a sweeter taste.  If you use salted oyster crackers reduce the salt to 1/4 tsp.
