Candied Yam Thanksgiving Casserole

One of our childhood favorites – Candied Yams. Our recipe from our family to yours.
Ingredients
  • 2 (16 oz.) cans yams, drained well
  • 2 eggs
  • 1/2 C dark brown sugar, firmly packed and divided
  • 1/3 C butter, melted and divided
  • 1 tsp. salt
  • 1/2 C pecan halves
Instructions
  1. Place the drained yams into a large mixing bowl and mash well with a potato masher or fork.
  2. Break the eggs into the mashed yams.
  3. Add 1/4 C of the brown sugar, 2 tbsp. of the melted butter and the salt to the mixture.
  4. Use an electric mixer on medium speed and beat the ingredients together well.
  5. Set the oven temperature on 350 degrees and allow the oven to preheat.
  6. Spray a 1 qt. casserole dish with a non stick cooking spray.
  7. Place the yam mixture into the prepared casserole dish.
  8. Lay the pecan halves over the top of the yam mixture to completely cover the top.
  9. Sprinkle the remaining brown sugar over the top of the pecan halves.
  10. Drizzle the remaining butter over the top.
  11. Bake 25 minutes
Notes

4 fresh yams can be substituted for the canned yams. Peel, quarter and boil them in water until fork tender before mashing.  This dessert also tastes good with mini marshmallows place over the top of the pecans instead of the sugar and butter.  Watch baking time so the marshmallows do not burn.  If they become to brown cover with foil and continue baking.

Thanksgiving Recipes: Not Your Ordinary Thanksgiving Bread Pudding Recipe

1/2 C butter, melted
1 (8 oz.) container sour cream
1 (15 1/4 oz.) can whole kernel corn, drained well
1 (14 3/4 oz.) can cream style corn
2 eggs
1 (8 1/2 oz.) pkg. corn muffin mix
1/4 tsp. paprika

How to Make It:

Place the melted butter into a mixing bowl.
Add the sour cream and both cans of corn.
Break the eggs into the mixture and stir until all the ingredients are incorporated together well.
Fold in the corn muffin mix only stirring until the muffin mix is just blended through.
Set the oven temperature to 350 degrees and allow the oven to preheat.
Grease a 3 qt. casserole dish with a non stick cooking spray.
Pour the corn mixture into the prepared casserole.
Sprinkle the top with the paprika.
Bake 40 minutes or until a knife inserted in the center comes out clean.

This Thanksgiving Recipe Serves 12

This is not the traditional bread pudding but it tastes just as good.  This dish is best served straight from the oven. Add cranberries for some additional flavor.

1 (20 ounce) can pineapple chunks, reserve juice
1 C Cheddar cheese, shredded
1/2 C white sugar
3 tbsp. flour
1/4 C butter
1 C snack crackers, crushed
3 tbsp. reserved pineapple juice

How to Make It:

Set the oven temperature to 350 degrees and allow the oven to heat.
Spray a non stick spray on the bottom only of a casserole dish.
Place the pineapple chunks into a large mixing bowl.
Sprinkle in the sugar and flour and toss to combine completely.
Place the butter into a microwave safe bowl.
Microwave on high 15 seconds or until the butter has completely melted.
Add the cracker crumbs to the melted butter and mix well.
Spread the pineapple mixture into the prepared casserole.
Place the buttered crackers over the top.
Bake 25 minutes or until the crackers are lightly browned.

This Thanksgiving Casserole Recipe Serves 8

Add a 1/2 C of miniature marshmallows in with the pineapple and cheese to give this casserole a sweet but satisfying taste.

2 (15 3/4 oz.) cans of yams, drained
1 egg
1/2 C butter, melted, divided
1/2 C sugar
1/2 tsp. ground cinnamon
1/8 tsp. salt
1 C butter flavored crackers, crushed*
1/2 C packed brown sugar

How to Make It:

Place the yams in a large mixing bowl and mash with a potato masher or fork.
Break the egg into the yams.
Pour in 1/4 C of the melted butter.
Sprinkle in the sugar, cinnamon and salt.
Mix well with a rubber spatula until all the ingredients are incorporated together well.
Bring the oven temperature up to 350 degrees.
Spray a square baking pan generously with a non stick cooking spray.
Spread the yam mixture evenly into the prepared baking dish.
Place the crushed crackers into a small mixing bowl.
Add the brown sugar.
Drizzle in the remaining melted butter and toss being sure all the crackers are covered.
Sprinkle the topping mixture over the top of the yams in the baking dish.
Bake 30 minutes or until nice golden brown on top.

This Thanksgiving Dinner Recipe Serves 8.

*Chopped pecans can take the place of the crackers in this recipe for a little change of pace.

Thanksgiving Dinner Recipes: Cheese and Cream Potato Casserole

What You Need:

6 lg. potatoes, peeled and diced into 1 in cubes
1 (16 oz.) pkg. cheddar cheese, shredded
1 (10 3/4oz.) can cream of chicken soup
1 (8 oz) container sour cream
1/4 C butter, melted
8 green onions, chopped
1/2 tsp. salt
1/4 tsp. pepper

How to Make It:

Fill a large saucepan 2/3 full of water.
Add the potatoes and set over medium high heat.
Bring the water to a steady boil.
Place the heat on low, cover the pan and cook the potatoes for 10 minutes or until fork tender.
Drain the potatoes well in a large colander.
Place the cheese in a large mixing bowl.
Add the soup, undiluted to the cheese.
Fold in the sour cream and melted butter.
Sprinkle in the chopped green onions and stir until all the ingredients are combined together well.
Bring the oven temperature to 350 degrees.
Spray a large baking dish well with a non stick cooking spray.
Add the potatoes to the cheese mixture and stir until completely covered.
Transfer the potato mixture into the prepared baking dish and spread out evenly.
Bake 50 minutes or until bubbly and a light golden brown on top.
Remove from the oven and allow standing 15 minutes before serving.

Add a little crumble bacon or change the soup to cream of celery to give this dish a little extra pizzazz.
