Thanksgiving Dinner Recipes: Cinnamon Yam Casserole
What You Need:
2 (15 3/4 oz.) cans of yams, drained
1 egg
1/2 C butter, melted, divided
1/2 C sugar
1/2 tsp. ground cinnamon
1/8 tsp. salt
1 C butter flavored crackers, crushed*
1/2 C packed brown sugar
How to Make It:
Place the yams in a large mixing bowl and mash with a potato masher or fork.
Break the egg into the yams.
Pour in 1/4 C of the melted butter.
Sprinkle in the sugar, cinnamon and salt.
Mix well with a rubber spatula until all the ingredients are incorporated together well.
Bring the oven temperature up to 350 degrees.
Spray a square baking pan generously with a non stick cooking spray.
Spread the yam mixture evenly into the prepared baking dish.
Place the crushed crackers into a small mixing bowl.
Add the brown sugar.
Drizzle in the remaining melted butter and toss being sure all the crackers are covered.
Sprinkle the topping mixture over the top of the yams in the baking dish.
Bake 30 minutes or until nice golden brown on top.
This Thanksgiving Dinner Recipe Serves 8.
*Chopped pecans can take the place of the crackers in this recipe for a little change of pace.

Thanksgiving Dinner Recipes: Cabbage and Tomato Casserole
What You Need:
2 tbsp. canola oil
1 medium onion, diced
1 medium bell pepper, diced
2 celery stalks, diced
1 (15 oz.) can tomatoes with chili peppers, diced
1 medium head of cabbage, chopped
1/2 stick of butter
1 (16 oz) pkg. processed American cheese, cubed
1 C milk
1 tsp. flour
How to Make It:
Place the canola oil in a Dutch oven over medium heat.
Add the onion, pepper and celery, stirring slightly to cover with the oil.
Cook the vegetables 6 minutes or until fork tender being sure to stir occasionally.
Add the tomatoes and cabbage and continue cooking 10 minutes stirring often so the cabbage does not burn.
Place the butter in a microwave safe dish.
Add the cheese cubes.
Remove and stir if the cheese is not completely melted continue cooking on high at 30 second intervals, stirring after each time, until the cheese has completely melted and the mixture is smooth.
Pour the milk into the cheese mixture.
Carefully stir in the flour until completely incorporated into the mixture.
Pour the cheese mixture into the pan with the vegetables.
Stir in the rice.
Place the oven temperature on 350 degrees and allow the oven to preheat.
Spray a casserole dish with a non stick cooking spray generously.
Spread the mixture into the prepared casserole dish.
Bake 55 minutes or until the rice is soft and the casserole is heated through.

This dish can be made ahead and placed in the freezer until ready to bake.

Thanksgiving Dinner Recipes: Mozzarella Mashed Potato Casserole
What You Need:
3 lbs. white potatoes, peeled and cubed
2 eggs
1 (4 oz.) pkg. mozzarella cheese, shredded
1/4 C Parmesan cheese, grated
3 tbsp. fresh parsley, minced and divided
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 tbsp. butter
How to Make It:
Put the potatoes in a large saucepan and cover completely with water.
Place the saucepan on high heat and bring the water to a rapid boil.
Reduce the heat to low, cover and cook 30 minutes or until the potatoes are fork tender.
Drain the potatoes well in a large colander.
Place the potatoes in a bowl and mash with a potato masher or an electric mixer until completely smooth.
Slight beat the eggs in large mixing bowl with a fork.
Place both types of cheese in the bowl with the beaten eggs.
Sprinkle in 2 tbsp. of the parsley, the salt, pepper and garlic powder.
Mix well to incorporate all the ingredients together.
Pour the egg mixture into the mashed potatoes.
With an electric mixer beat the potatoes for 2 minutes on medium speed or until all the ingredients are incorporate together well.
Heat up the oven temperature to 350 degrees.
Spray a glass casserole dish with a non stick cooking spray.
Spread the potato mixture evenly into the prepared casserole dish.
Dot the top of the potato mixture with the butter.
Bake 20 minutes or until completely heated through.
Sprinkle the remaining 1 tbsp. parsley over the top before serving.

If you want to jazz up this casserole add some diced cooked ham or even some diced turkey to it. Experiment with different types of cheeses to add flavor and color to your casserole.

What You Need:
6 lg. potatoes, peeled and diced into 1 in cubes
1 (16 oz.) pkg. cheddar cheese, shredded
1 (10 3/4oz.) can cream of chicken soup
1 (8 oz) container sour cream
1/4 C butter, melted
8 green onions, chopped
1/2 tsp. salt
1/4 tsp. pepper
How to Make It:
Fill a large saucepan 2/3 full of water.
Add the potatoes and set over medium high heat.
Bring the water to a steady boil.
Place the heat on low, cover the pan and cook the potatoes for 10 minutes or until fork tender.
Drain the potatoes well in a large colander.
Place the cheese in a large mixing bowl.
Add the soup, undiluted to the cheese.
Fold in the sour cream and melted butter.
Sprinkle in the chopped green onions and stir until all the ingredients are combined together well.
Bring the oven temperature to 350 degrees.
Spray a large baking dish well with a non stick cooking spray.
Add the potatoes to the cheese mixture and stir until completely covered.
Transfer the potato mixture into the prepared baking dish and spread out evenly.
Bake 50 minutes or until bubbly and a light golden brown on top.
Remove from the oven and allow standing 15 minutes before serving.
