What You Need:
1 (14.5 oz.) can asparagus, chopped
1 (15 oz.) can sweet peas
1/2 can of juice from asparagus
1/2 can juice from peas
1 tbsp butter
1 (10.75 oz) can cream of mushroom soup
2 hard boiled eggs, sliced
1 tsp. paprika
How to Make It:
Place the juice from the asparagus and peas into a saucepan over medium heat.
Place the butter in the saucepan with the juice.
Stir in the soup and blend the ingredients together.
Bring the mixture to a steady boil, stirring occasionally.
Bring the oven temperature up to 350 degrees.
Spray a casserole dish on the bottom and sides with a non stick cooking spray.
Place the chopped asparagus in the casserole dish.
Add the peas and toss to incorporate together.
Pour the soup mixture over the top of the vegetables and stir to cover.
Bake 25 minutes or until the casserole begins to bubble.
Remove and allow the casserole to stand 10 minutes.
Place the sliced eggs over the top of the casserole and sprinkle with the paprika before serving.

For a change of pace chop the eggs and place them in with the asparagus and peas before adding the soup mixture. Top the casserole with crushed potato chips before baking to give the casserole some crunch.

What You Need:
1/2 C barbecue sauce
1 tsp. yellow mustard
1 (28 oz.) can pork and beans
1 (15 oz.) can garbanzo beans, drained and rinsed
1 (15 oz.) can kidney beans, drained and rinsed
1 (4 oz.) pkg. Cheddar cheese, shredded
1 (10.8 oz.) can buttermilk biscuits
2 tbsp. cornmeal
How to Make It:
Place the barbecue sauce and mustard into a large saucepan over medium high heat.
Pour in the pork and beans including the juice.
Add the garbanzo beans and kidney beans and stir to mix all the ingredients together.
Gently stir in the shredded cheese.
Bring the mixture to a rapid boil and then remove from the heat.
Spray a large casserole dish with a non stick cooking spray on the bottom only.
Bring the oven temperature to 350 degrees and allow the oven to heat up.
Place the bean mixture into the prepared casserole dish.
Separate the biscuits and cut each biscuit into quarters.
Place the cornmeal in a small bowl.
Roll each biscuit quarter through the cornmeal to lightly cover.
Arrange the biscuits on top of the casserole.
Bake 25 minutes or until the biscuits are a golden brown.

What You Need:
1 (1 lb.) pkg. bacon
2 tbsp. olive oil
3 cloves of garlic, chopped
1 (8 oz.) pkg. fresh mushrooms, sliced
2 (10 3/4 oz.) cans cream of mushroom soup with roasted garlic
1 1/2C milk
1/4tsp. Pepper
2 (16 oz.) bags frozen French cut green beans, thawed and drained
2 2/3 C French fried onions
How to Make It:
Place the bacon in a large skillet over medium high heat.
Cook the bacon until it becomes quite crispy.
Drain the bacon well on a piece of paper towel.
Add the olive oil to the bacon drippings.
Place the garlic and mushrooms in the pan with the oil and drippings.
Stir slightly to cover the mushrooms.
Cook 6 minutes or until the mushrooms begin to soften.
Drain off any extra liquid and set aside to cool slightly.
In a large mixing bowl whisk the soup and milk together well.
Sprinkle in the pepper and stir to incorporate.
Add the green beans and 2 C of the fried onions.
Use a rubber spatula to mix the ingredients together making sure the beans and fried onions are covered well.
Spray a casserole dish with a non stick cooking spray.
Place the oven temperature on 350 and allow the oven to heat.
Spread the green beans into the prepared casserole dish.
Bake 35 minutes.
Remove the casserole and stir well.
Crumble the bacon into a large mixing bowl.
Add the remaining fried onions and toss to incorporate.
Sprinkle over the top of the casserole.
Return to the oven and continue cooking 7 minutes or until the fried onions begin to brown.

What You Need:
1 C long grain rice, uncooked
1 (11.5 oz.) can onion soup
1 (11 oz.) can beef broth
1 (16 oz.) can mushrooms, (stems and pieces) drained
1 stick of butter
How to Make It:
Spray a casserole dish with a non stick cooking spray on the bottom only.
Place the oven temperature on 325 degrees and allow the oven to heat up.
Place the rice in the prepared casserole dish.
Pour in the onion soup and beef broth.
Stir in the mushrooms.
Lay the stick of butter in the middle of the casserole dish.
Cover the casserole with aluminum foil.
Bake 50 minutes.

Be careful not to over bake this casserole as it will become too dry. Quick cooking rice is also not recommended. It becomes too sticky and clumps together.

Thanksgiving Dinner Recipes: Cabbage and Tomato Casserole
What You Need:
2 tbsp. canola oil
1 medium onion, diced
1 medium bell pepper, diced
2 celery stalks, diced
1 (15 oz.) can tomatoes with chili peppers, diced
1 medium head of cabbage, chopped
1/2 stick of butter
1 (16 oz) pkg. processed American cheese, cubed
1 C milk
1 tsp. flour
How to Make It:
Place the canola oil in a Dutch oven over medium heat.
Add the onion, pepper and celery, stirring slightly to cover with the oil.
Cook the vegetables 6 minutes or until fork tender being sure to stir occasionally.
Add the tomatoes and cabbage and continue cooking 10 minutes stirring often so the cabbage does not burn.
Place the butter in a microwave safe dish.
Add the cheese cubes.
Remove and stir if the cheese is not completely melted continue cooking on high at 30 second intervals, stirring after each time, until the cheese has completely melted and the mixture is smooth.
Pour the milk into the cheese mixture.
Carefully stir in the flour until completely incorporated into the mixture.
Pour the cheese mixture into the pan with the vegetables.
Stir in the rice.
Place the oven temperature on 350 degrees and allow the oven to preheat.
Spray a casserole dish with a non stick cooking spray generously.
Spread the mixture into the prepared casserole dish.
Bake 55 minutes or until the rice is soft and the casserole is heated through.
