Thanksgiving Dinner Recipes: Oven Style Blueberry Blintz Thanksgiving Casserole Recipe

1 (2 lb.) container ricotta cheese
1 (8 oz.) pkg. cream cheese, room temperature
4 eggs, divided
1/4 tsp. salt
1 1/4 C sugar, divided
1 1/2 tsp. vanilla extract, divided
Juice from 1 lemon
1 C butter, melted
1/4 C milk
3 tsp. baking powder
1 C flour
1 tsp. cinnamon
1 (20 oz.) can blueberry pie filling
1/2 tsp. lemon peel, grated

How to Make It:

Set the oven temperature to 300 degrees and allow the oven to preheat.
Place the ricotta cheese and the cream cheese in a large mixing bowl.
Add 2 eggs to the cheese mixture
Sprinkle in the salt and 1/4 C of the sugar.
Pour in 1/2 tsp. of vanilla extract and the lemon juice.
Blend all the ingredients together with an electric mixer on medium speed.
In a separate mixing bowl place the melted butter and milk together.
Add in the baking powder, 1/2 C sugar, and the flour.
Place the remaining eggs and remaining vanilla extract into the bowl.
Use the mixer and blend the ingredients together well on low speed.
Spray a long baking pan with a non stick cooking spray.
Place 1/2 of the flour mixture into the prepared pan.
Spread all of the cheese mixture over the top of the flour mixture.
Pour the remaining flour mixture over the top of the cheese mixture being careful that the 2 mixtures don’t mix together.
Place the remaining sugar and cinnamon in a small bowl and toss to combine well.
Sprinkle the sugar mixture over the top of the casserole evenly.
Bake 50 minutes.
Place the pie filling and lemon peel in a microwave safe dish and stir together.
Place in the microwave 15 seconds, stir and microwave 10 seconds longer.
Pour the blueberry mixture over the top of the casserole before serving.

1/2 C milk
1 (10 3/4oz.) can cream of mushroom soup
1/2 tsp. pepper
1/4 C Parmesan cheese
1 C frozen mixed vegetables
2 C egg noodles, cooked and drained
1 (4 oz.) pkg. Cheddar cheese, shredded

How to Make It:

Pour the milk in to a large mixing bowl.
Stir in the soup using a rubber spatula.
Sprinkle in the pepper and Parmesan cheese.
Add the vegetables and stir well to incorporate.
Carefully fold the noodles into the mixture.
Set the oven temperature to 400 degrees and allow the oven to preheat.
Spread the mixture into a 2 qt. casserole dish.
Bake in the preheated oven for 22 minutes.
Sprinkle the cheese on top and continue baking 5 more minutes or until the cheese has melted.

To add a little crunch to this casserole cover the top with fried onions before baking.  If you don’t like egg noodles any type of pasta will work to make this dish something special.

1 C saltine crackers, crushed
1 pt. fresh oyster, reserve liquid
1/4 C scallions, diced
1/4 C fresh parsley, chopped
1 tbsp. lemon juice
1 tsp. salt
1/2 tsp. pepper
1 tsp. Worcestershire sauce
8 tbsp. (1 stick) butter
1 C light cream
1/2 C milk
1 dash Tabasco sauce
1/2 tsp. paprika

How to Make It:

Set the oven temperature to 400 degrees and allow the oven to preheat.
Generously spray a shallow casserole dish with a non stick cooking spray.
Layer the bottom of the casserole with 1/3 of the crushed crackers.
Layer half of the oysters over the top of the crackers.
Layer half the scallions over the oysters.
Whisk the parsley, lemon juice, salt, pepper and Worcestershire sauce together.
Pour half of the lemon juice mixture over the top of the casserole.
Dot the top of the casserole with half of the butter.
Mix the cream and milk together and pour half of that over the casserole.
Repeat the layers topping the casserole with the last 1/3of the cracker crumbs.
Add the dash of Tabasco sauce before topping with the cracker crumbs.
Sprinkle the paprika over the top of the cracker crumbs.
Bake 30 minutes or until the casserole is set and jiggles when shaken.

This is always a hit on Thanksgiving.  It makes a great substitute for that always welcomed oyster dressing.

1 butternut squash, peeled and cut into 1/2 in. pieces
1 lb. red potatoes cut into 1/2 in. wedges
3 parsnips, peeled and cut into 1/2 in. pieces
1 red onion cut into 1/2 in. wedges
3 tbsp. olive oil
1 tsp salt
1 tsp. tarragon, dried
1 (14.5 oz.) can chicken broth
2 C fresh broccoli florets
1/2 tsp. lemon peel, grated
4 tsp. cornstarch
1 1/2 C milk, divided
1 3/4 C baking mix
1/2 C yellow cornmeal
1/8 tsp. cayenne pepper

How to Make It:

Set the oven temperature on 375 degrees and allow the oven to heat.
Place the squash, potatoes, parsnips and onions in a shallow baking dish.
Pour the olive oil in a small mixing bowl and stir in the salt and tarragon.
Pour the oil mixture over the top of the vegetables and toss to coat well.
Bake 55 minutes or until the vegetables are fork tender stirring once during baking.
Pour the chicken broth into a saucepan and place the pan over medium heat.
Bring the broth to a quick steady boil.
Add the broccoli and lemon peel.
Reduce the heat to low, cover and cook 3 minutes until the broccoli is crisp tender.
In a separate bowl combine the cornstarch and 1/2 C of the milk.
Stir together until the mixture becomes smooth.
Pour the cornstarch mixture into the broccoli and bring back to a rapid boil.
Cook 2 minutes being sure to stir constantly until mixture thickens.
Remove the saucepan from the heat once the sauce thickens.
When the vegetables are roasted stir them into the thickened mixture.
Spread the vegetable mixture into the pan the vegetables were roasted in.
Combine the baking mix, cornmeal and cayenne pepper in a bowl.
Stir in the remaining 1 C of milk until the dough become smooth.
Drop the dough by rounded spoons over the top of the vegetable mixture.
Bake 18 minutes or until the top is a golden brown.

1/3 C milk

1 red pepper, chopped
1 (6 oz.) pkg. stuffing mix for chicken

How to Make It:

Place the cream cheese in a microwavable bowl.
Pour the milk in with the cream cheese.
Microwave the mixture on high for 1 minute.
Remove the mixture from the microwave and stir until smooth.
Add the Parmesan cheese and the basil to the mixture and blend together well.
Place all the vegetables into the mixture and stir until completely covered.
Spray a large baking dish generously with a non stick cooking spray.
Bring the oven temperature to 350 degrees and allow heating up.
Place the vegetable mixture into the prepared baking pan.
Prepare the stuffing mix as directed on the package.
Spread the prepared stuffing mix over the top of the casserole.
Bake 30 minutes or until the stuffing is a light golden brown.
